DOwnside is that I had to buy pre-blended salt-nitrite "curing salt", so I have to throw away the salt, spices and sugar and stuff that I measured out the other night cavete terrae. I get mine by the half kilo, lasts me about a year. Apparently (according to a few places, anyway) it's illegal for them to sell it right to me. Apparently I might poison myself!!11oneohmygodweareallgonnadie. I did find a food supply depot that's happy to sell me unadulterated sodium nitrite but their shipping cost was a bit exorbitant so I skipped it this time. $19 to ship 50 grams?
