As far as I know, most of them run on either T-mobile's network or AT&T's network. So depending on what stops you're going to make, you might want to ask locals with phones on either network if they get good coverage there and make sure you pick a SIM accordingly. Other than that, Google is your friend.

For the record, I've had pretty good luck with AT&T at Elsinore and Eloy.

Squeakums I usually grab an AT&T SIM while I'm over there, it's pretty straightforward even though I hate giving them money. T-Mob is cheaper but their coverage is ass and shit.
