Chili

So I find myself at home this weekend due to shitty weather and am out of chili...so decide to put on a pot..

I like to call mine "Colon Buster Chili" its not stupid hot but it will warm you up on a cold winters day. I always change my recipe with every batch....hopefully improving!

This batch I started with 6lbs of lean ground beef and 2 lbs of hot sausage (ground) I like a really meaty chili !!! 1 very large red onion..1 very large white onion and 2 med size yellow onion, 2 large green peppers...4 very large jalapanoes and a couple dozen white mushrooms and and a whole clove of fresh garlic.

6 cans/bottles of tomatoe sause( whatever is on sale) tomatoe paste...3 cans stewed tomatoes...and 3 cans of red kidney beans( am thinking I needed 5)

I have no idea how much chili powder and crushed chili's along with caynene pepper I have added...season to taste knowing that even if it dosent taste hot now..it will once it cooks down!!! used kosher salt and fresh ground black pepper to season the meat during browning...

4 hours in on the cook down process now...starting to look like chili :) still adding chili powder and other spices..but being careful.....


So who else like to make chili ?? advise?

Mmmmm Chili....

Last batch went something like this:

3lbs lean top sirloin cubed
3 cans kidney beans
3 cans black beans
2 14oz cans of diced tomatos
3 Jalapenos
Chili Powder
paprika
minced garlic
red pepper

8 hours in a crock pot

its finally getting thick !!

I perfer my chili on dogs/sausages...or even better nacho's / scoups.....corn chips...

my arm is s getting sore from stirring the pot....

and the heat is coming into its own...

looking to be a good pot!

GREEN CHILE STEW



Don't get me wrong, I like traditional chili as much as the next person, but green chili is worth trying/doing if you've never had it before, and worth it again and again. :)


1 lb. pork (cheap cut) cubed (substitute chicken in you are a pig-o-phobe and heretic)
1 large onion, chopped
garlic to taste
2 large potatoes, cubed
2 large tomatoes, seeded, chopped
1-3 lbs green chile, roasted peeled, and seeded, chopped, depending on heat level of chiles (fresh--none of that canned crap. frozen is OK in a pinch)
6 cups chicken stock
cumin
oregano
coriander

Brown the pork, add onion and garlic. Saute till onion is soft. add spices, half of the green chiles, and chicken stock, simmer till the pork is tender. Add potatoes, cook till the potatoes are soft, mash a few to thicken the stew. Add the tomatoes and remaining green chiles, cook for 10 min. Salt and pepper to taste.

Garnish with:
cilantro
lime wedges
jack cheese

Oddly enough Green Chile tastes nothing like Thai Green curry, though both are amazing.

oh man, making me miss living in New Mexico.

See, the trouble is, for those of us who don't live in NM, it's nearly impossible to find fresh green chile =( Albertsons here does sell frozen green and red, but it's all of the mild variety, and i find that has less flavor than medium or hot.

as for me...I'll go for a Four-Way, please:

Mmmm. Hormel chili, yum.

I just use those awesome McCormick chili seasoning packets and whatever variety of meat and veggies happen to be in my fridge. Oh and ranch powder.

But that's only for coney's...adding plenty of onions and tons of mustard to kill the taste enough to trick yourself into thinking that you're not actually eating less than dog food.
