turtlespeed 220 #52 June 5, 2011 QuoteCharcoal, lit with a chimney NOT fluid. ptui. Prefer lump charcoal with good wood chunks. Soak wood a day in advance. I do have a gas fired smoker though. Favorite meat would have to be the ribeye. Prefer at least 1" thick cut. a nice marbled and aged ribeye is good, but with a Porterhouse, you get the filet on one side and the NY strip on the other, and after you get to gnaw on the bone if you want to get animalistic -I'm not usually into the whole 3-way thing, but you got me a little excited with that. - Skymama BTR #1 / OTB^5 Official #2 / Hellfish #408 / VSCR #108/Tortuga/Orfun

warpedskydiver 0 #54 June 6, 2011 Tenderloins are merely the inner core of an entire tenderloin, I really like a bone in rib eye, great flavor. IIRC also referred to as a Delmonico. Meats with the bone still in provide far more flavor.
JohnnyMarko 1 #55 June 6, 2011 QuoteOk, so what is everyones preference with grilling??? What is your favorite thing to grill? Charcoal, fur sher. Tilapia, veggies (asparagus, zucchini, peppers), and fruit (waiting for Squeek to make a joke about fruit) Try this, mix rum, brown sugar, and honey in a bowl. Dip some pineapple in the mixture and let it soak in real good...grill and enjoy!

JohnMitchell 16 #57 June 6, 2011 I use a propane grill most of the time for convenience. Last night was chicken, later this week tuna steaks, maybe slow roast some pork chops too. We love a good rib steak, but with a family of up to 6 we often opt some good chuck steaks. A little tougher, sure, but tons of flavor. We picked up a propane smoker this last fall. I've got 3 racks of pork ribs thawing in the fridge for that bad boy.
Skootz 0 #58 June 9, 2011 Anyone have a receipe for BBQ'ing a roast?
warpedskydiver 0 #59 June 9, 2011 Use an aluminum foil pan under it, sear it first and then add a bit of water in the pan, this is to keep the dripping for gravy from burning. Arrange the coals at the perimeter leaving the center bare so that the roast does not burn.
JohnMitchell 16 #60 June 9, 2011 Warped's ideas are good. Are we talking beef or pork? I've done both. Prefer to start off with the smoke, a good sear first for beef, and then finish in a dutch oven for moistness.
