Shallow baking pan, line with single sheet of aluminum foil, spread bacon slices out flat, bake at 375 degrees for 5-8 minutes, turn over, bake until doneness meets requirements.

A big flat pan with extra wide foil works best. I use a 12x18 pan. Fold up the sides of the foil to keep the spatter vertical.

I read somewhere that the nitrosamines that are bad for you come from exceeding 400 degrees when cooking bacon. Can't find it now.



Add to this a light sprinkle of brown sugar with a little dry mustard.YUM YUM!

Thick sliced and just fried till it's 'floppy'. Pull the bacon from the fat and drop-in a couple of eggs. A little course-ground black pepper. Splash the hot bacon grease over the eggs, using a spoon till the whites are done and the yelows aren't. Serve with hash browns and some salsa on the side or fresh sliced tomatoes and biscuits. That'll get ya' goin'!

I thought of that, but didn't want to complicate things too much.

Normal bacon is from the belly, but Canadian bacon is from the back, and is more like ham than bacon. I do love Canadian bacon too. Especially on Eggs Benedict.

Oops... my bad. I'm referring to 'our' biscuits. Made from flour, milk, baking powder a little shortening and some salt. Roll the dough out to about 1/2 inch or a little thicker. Use a cutter (round) to cut each biscuit out with. Place on a baking sheet and bake in the oven at 450-deg., 12 - 13 minutes or till golden brown. they rise-up to about two inches or better. serve with butter, honey, jelly...

Depends...on a sandwich it has to be nice and crispy, preferably thin. As a side, gotta be thick cut and not too crispy. Mmmm....bacon.

Oakridge Smokehouse in Schulenburg, TX. One of the best breakfast buffets I've ever been too, mainly because of the bacon.

Y'all might think this is crazy, but try it before you decide. Banana wrapped in bacon is pretty freakin tasty. Cook the bacon most of the way through but still very pliable. Then wrap it around banana and heat until the bacon completes cooking and the banana is warmed all the way through. Mmmmm....delicious!
