BillyVance 34 #1 December 28, 2007 Sunday night - Christmas Eve Eve: Swiss Cheese Fondue with toasted bits of French bread and slices of apple. Monday night - Christmas Eve: Beef Tenderloin roast, steamed cauliflower with bread crumbs, and a couple other dishes I can't remember. The tenderloin was $14 per lb but got it on sale for $10 per lb. I remember thinking it had better be damn good for a $30 piece of meat!!! Oh boy was it damn good! Tuesday night - Christmas dinner!: 14 lb turkey, Pepperidge Farm dressing, green bean casserole, onion balls, cranberry sauce, and a couple other dishes I can't remember. We had 7 people, including my folks and a skydiver friend and his wife. Been eating leftovers all week. My weight went up 5 lbs. Now I only weigh 150! I just jammed the turkey carcass into a big pot and boiled it last night. Gonna make turkey soup. livendive 8 #2 December 28, 2007 Saturday my folks took Erin and I out for a steak dinner. Sunday was ham with my whole family. Monday night was a couple of beeyootiful new yorks. Tuesday was my first attempt at a prime rib, and it was really good, albeit slightly overcooked. You'll have perfect prime rib every time. I'm not sure if it was my method or my thermometer that caused the problem. Most things online said to pull it out at 140 degrees for medium rare. Mom makes a traditional "Seven Fishes" Italian Dinner......for Christmas Eve... No Meat...( Catholic thing ) The fish dishes, represent the 7 sacraments Shrimp Cocktails... Calamari ( stuffed squid) ( much better Tasting, than it sounds ) with Linguini. Salted Cod, with red peppers, parsely and dressing. Fried scallops Fried shrimp Fried fish filets Clams casino casserole Also Spaghetti Al Olio' ( Fresh garlic, sautee'd in E V O O , salt and pepper ,,, parmegiano reggiano cheese, to taste )... goood... all sorts of wines, Green Salad, Sliced fennel ( anise) , lupini beans, and fruit, ( pears, tangerines, grapes, bananas, ) and mixed nuts which you have to crack open AT the table..... lively conversation,,, many laughs, good company... 23 at the table...Christmas day, My sister Hosted, and served appetizers and hors dourves, cheeses and chips, nuts and candy, Roasted prime rib, potatos, green beans, salad, wines and desserts... Then over to a Cousins Home for dessert.
