well... the shortening that goes into the pie crusts really negates the whole "nutrious fruit" idea... but its a nice thought... :D:D

I didn't call it health food... :D:D but it doesn't use 3 lbs of sugar (that's a lot of sugar...)

and Jenn I've heard that about lard as well... I just haven't built up the nerve to try it yet... and frankly I haven't had any complaints about my pie crusts being bad or anything yet... so... :$

And I may have exagerated the amount of sugar a bit, but not that much!:

INGREDIENTS:
pastry for 2-crust 9-inch pie
1 1/2 pounds rhubarb, trimmed, washed
2 eggs
1 3/4 cups sugar

4 tablespoons flour
1/4 teaspoon mace or nutmeg
dash salt
1/4 cup orange juice
1 tablespoon melted butter
