I'd start with a decent mid-level Willamette Valley pinot noir. If the pairing works well, you can get a ridiculously priced burg for the next cat.

I haven't tried siamese, though I understand that they are active, and therefore have a darker meat than a standard roadkill tabby.

Nevertheless, most of the cats out there are fantastic with gravy unless you get the loin cuts. For true tenderness, go for a flash searing of the masseters, which stand up well on their own.

Because of the texture and flavor of cats, they are excellent summer fare. So I'd go with a white wine. A chardonnay adds buttery smoothness, but the taste of a Riesling actually goes best with it.
