Everybody takes the whole she-bang into their mouths (raw quail egg, sake, and tobiko) swish it around in you mouth. Spit it all back into the glass. Then back into your your mouth ending up with as little tobiko as possible in your glass. The person with the most tobiko in their glass pays for the round. And they are called Balut. They taste very much like a boiled egg but you get some small chewy feathers and the undeveloped feet crunch a bit. Proper way to eat is to crack the egg at the top, drink the juice then peel and consume the embryo. Not bad if you can get over eating a duck fetus... It was topped with raw quail egg... edit to add Porpoishead if you want Balut you need to go to at least Southeast Asia to get it. I have found it in Japan, Phillipines, Cambodia, Vietnam (rare) and Thailand. Best gotten in Phillipines from my experience. If you get it in China it is 1000 year old eggs which are buried in the ground until the embryo begins to rot - never had it but have heard from varying sources that they are wonderful like truffles to they are vomit-inducing.
