Drape the larger over the pan, fit to the inside, and put in your meats, cheese, vegetables, whatever. Throw in the oven at 210°C (410°F) on the lower rack for 15 minutes, then move to the top rack for fifteen more. If the top starts to overcook, cover it in foil.
