Adventures in Egg Poaching

Dont take the piss here! I am not a very good cook at all right and the other day i tried to make poachd eggs, for some very unknown & strange reason i managed to get the white bit crispy! Any ideas how???????????? cos havnt got a clue!

P.S, never ask me to cook a meal ;)

Well, it's really not as difficult as he makes it seem.

But I did have my own adventure with poached eggs once, about 16 years ago, when I made Eggs Benedict for company. According to the Joy of Cooking (first and last mistake), you poach the eggs ahead of time, take them out, let them sit while you do everything else, and then, right before assembly, turn them back into the hot water to heat them up.

Seriously. This is dumb. The best you will get is lukewarm eggs. And lukewarm Eggs Benedict is disgusting.

When you say crispy, do you mean it looked crispy (bubbly at the edges) or that it tasted crispy?

My best guess is that you really didn't have enough water in the pan.

Either that, or you need an exorcist.

what people forget to do is add vinegar to poaching liquid and "it's all good". Vinegar makes eggs less prone to breaking and helps them stay together. Don't ask me about the science, I don't do SCIENCE.

You can ask my girl about it. After all, she blinded me with science! B|
