I am not a very good cook at all right and the other day i tried to make poachd eggs, for some very unknown & strange reason i managed to get the white bit crispy! But I did have my own adventure with poached eggs once, about 16 years ago, when I made Eggs Benedict for company. According to the Joy of Cooking (first and last mistake), you poach the eggs ahead of time, take them out, let them sit while you do everything else, and then, right before assembly, turn them back into the hot water to heat them up. Seriously. This is dumb. The best you will get is lukewarm eggs. And lukewarm Eggs Benedict is disgusting. rlIf you don't know where you're going, you should know where you came from.
