Whats for dinner?

So a few of us are gettin together tonite, and Im gonna whip up some eats.
Were torn on what to have. Im pretty good in the kitchen, but dont want anything so complicated I cooking all evening.

Some of my specialties:
Chicken enchaladas w/ beans and fresh salsa

Pork loin chops marinated in a galic/sundried-tomato/basil sause w/ saffron rice and green beans with bacon

Jerk chicken w/ grilled veggies and baked potato

Home made pizza (I cheat a little and used a dough mix, and store bought sauce)

any ideas?

One of them I like is grilled salmon (seasoned with olive oil, salt, pepper and lemon zest).

Servie it by placing the salmon filets on top of a white wine and cream sauce. I season my sauce with garlic, shallots, basil, mint, parsley, fennel, etc. Hell, add other stuff to season the sauce if you like! I also add some diced tomatoes for color and flavor.

Now for the kicker - on top of the salmon, put some of your homemeade salsa or pico de gallo on top of the salmon filet. I know, sounds odd, but the damned thing works! The white sauce complements the spicy salsa.

It's also a meal that good with white wine, red wine, or beer, and it's pretty damned easy to make. You've got sauce making, your salsa, and some barbecue grilling. And it looks super fancy-shmancy.

Pssst....they have one at the Zoo. I'm trying to figure out a way to get it out. I was thinking about painting it camoflauge but then the paint would ruin the tender meat. Do you think that I could just walk it out the front entrance without anyone knowing? I know, I could act like I was taking it out for people to pet in the parking lot and then I could jump on it's back and ride it up Peachtree Street to I-85. I don't think anyone would notice outside of the Zoo.:|
