It's supposed to be the room temp. of the cellar which is slightly chilled in my opinion. Standard room temp is considered to be 22 C (about 72 F). Most reds like temps between 18 and 15 (64 and 59 F). A room at 18C would be a bit chilly. That being said, dont be a snob! It was inexpensive and was a good middle ground for my wife and I. I prefer dry, and she likes sweet. This one had a definite taste of grape, but without being sweet or "fruity" tasting. It didn't have the acid or bitter finish that many of the less expensive Zins have. As for temperature, I like mine at room temp (about 70 in my house) or slightly cooler. I keep my stored wine close to the concrete floor in my basement, so it's usually about 65-68 degrees when I open it. Their 2000 vintage to me had way to many tannins. I'm spoiled though, with Derek's mom living in Napa, CA we go out to see her twice a year to visit and stock up on wine. I currently have 40 bottles sitting in my closest waiting for me to buy a wine cooler from our last trip in Sept. Oh and Reds need to be kept at around 60 degrees, but more importantly the temp needs to stay constant, so a closet that has no outdoor walls is ideal if you don't have a cooler or cellar. Do not store your whites or reds in the fridge, it's just to cold. You can use the fridge to chill them to the temp you want though.Fly it like you stole it!
