Your favorite healthy meal??

Aw come on, share please? :)
I'm running out of ideas for healthy meals:S.

Tell me what your fave. healthy meal is. All I can think of cooking is chicken/steak/fish with salad or fresh veggies, black beans and rice, fried rice with veggies and chicken, etc. Help???:)

Salmon and veggies (peppers, onions, zucchini, whatever's fresh) on the grill. Brush each with a little olive oil, salt, and pepper... simple, and delicious.

Chicken Stir-Fry

Ingredients:
3 oz. boneless chicken breast
1 clove garlic
1 tbsp. teriyaki sauce
1 medium carrot
1 1/2 large celery stalks
1 1/4 cups fresh green beans
2/3 tbsp. olive oil

Cook rice according to recipe provided, omit salt. Rinse and pat dry chicken and vegetables. Use separate cutting board for chicken and vegetables. Cut chicken into strips, set aside. Chop carrot, celery and green beans into bite-sized pieces; mince garlic, set aside. Heat half of the oil in a nonstick skillet over medium heat: sauté minced garlic until golden; add chicken and stir-fry until chicken is no longer pink. Remove chicken and garlic from pan and reserve. Add the rest of the oil and the chopped vegetables to the pan and sauté until tender, about 3-4 minutes. Add reserved chicken and garlic to pan; add teriyaki sauce and stir-fry about 2 minutes more. Serve over cooked rice.

thanks Krisanne! Chad and I just bought some salmon fillets and I want to grill them, so I'll have to add some veggies! Salmon is so good for you, there's talk that it might help lessen the appearance of cellulite/stimulate collagen production or something,plus it has Omega 3's!!! B| ( great for the skin!)

My kids and I love this one from "The Abs Diet" book and it's really quick:

1 lb. Ground Turkey
1 can corn
1 can black beans, drained
1 can mexican diced tomatoes
1/2 pkg. dry chili mix
1/4 c. water
Brown Rice

Brown the ground turkey in a large skillet. Drain off drippings. Add the next 5 ingredients and simmer for 10 minutes. Serve with cooked brown rice.

This is my favorite quick and easy healthy meal that you can do nearly anywhere. It's especially good when you're on the road:

One can of tuna (packed in water). I prefer the fancy while albacore variety (as does my cat). Size depends on how hungry you are.

Thoroughly rinse the tuna, drain and put in a bowl.

Add coarse-ground pepper to taste. mix well.

Add shredded cheese to taste (we're talking a handful of cheese--not just a couple of tablespoons). I prefer shredded Monterrey Jack or some of the nice blends, e.g., Monterrey Jack and Cheddar.

Mix really well with a fork and microwave on high for a minute to a minute and a half.

It's quick, cheap, healthy, and actually pretty good!

I often add picante sauce on top.

Pork Tenderloin rubbed with chopped up herbs, lemon zest, garlic and olive oil baked in a dish with apple and yam wedges which have been sprinkled with cinnamon.

Yum!

I like my salmon with some dill, lemon juice, stone ground mustard and salt and pepper on a bed of wilted greens with some corn on the cob or some steamed and seasoned zuchini to go with it.

Chicken curry (impoverished student version)

Skin chicken (whatever was on sale). Saute some onions in a little oil, add the curry powder after they're transparent or browned (however you like them).

Add chicken, and cook awhile until nearly done. Add tomatoes, green, red, or yellow peppers, or whatever else is hanging around, and cook until the flavor is blended. Salt and pepper (and probably more curry powder) to taste. Add some water if you like more water. Add some raisins too.

Serve over brown rice.

I think you'll be surprised at how tasty it is for something that is so quick, easy, and cheap to make. Someting about the pepper and cheese really seems to neutralize the fishy taste. Adding picante on top of that really makes it tasty!

Mmmmmmm, that sounds good Wendy!!! And I like the "impoverished student version"!!! :D That description definitely fits me:). I'm not sure if I like the taste of curry, it's been awhile since I've had it but I'm adventurous and need new spices so I bet I'd like it.:)

grilled kabobs with your choice of meat or shrimp, or plain vegies. YUM!!

Sauerkraut with low fat turkey sausage. Or turkey sausage kabobs with onions and peppers, put on plate with a bit of ketchup. Use mostly vegies, not much meat.

Root beer float made with diet root beer and Turkey Hill fat free sugar free vanilla ice cream

I usually eat salads if I feel like eating healthy.
Cesar salad usually. I hate veggies so I have to force myself to eat it.

My favorite is turkey burgers.
I make my patties thick and season it with
Finely chopped onions, a bit of green onions,
Salt, and pepper. I grill these until the juices
Run clear but do not overcook it. I also prepare some spinach sautéed with fresh garlic. I also sauté some mushrooms with salt and pepper. I add the sautéed mushrooms and spinach, with freshly
Diced roma tomatoes and lettuce on buttered toasted burger buns, between the girlled turkey pattie and I never forget to put Helman mayonaise, it's sooo good. It’s delicious with ice tea especially on a nice sunny day with family or friends!

Depends on what YOU consider healthy....

For me, it was last night's meal. 3 baked potatoes, a cup or so of sweet corn, sauteed mushrooms, and a 1.5 pound T-Bone (grilled), with 1% milk.

Tonight? Chicken on the grill. I de-skin it, and mix up my own baste of herbs and vegetable oil. The oil burns-drips off, creating more smoke. Smoke=flavor when grilling. Mashed taters, green beans.

Can ya tell I'm a "meat and potatoes" kinda guy?

My ~100 point cholesterol levels say I'm doing OK... ;)
