skymama 37 #1 November 23, 2003 I'm making a grocery list and I thought I would share this with you all. This is a favorite that I bring to Thanksgiving dinner. It's quick, easy and very moist. (Hey, that sounds like a bad date I had once. ) Anyway, if you're invited for dinner somewhere, you can bring this and impress your hosts. It makes 2 loaves, so you can keep one and have it with your morning coffee. If you have any other tried and true yummy appetizers or side dishes, share with us! Pumpkin Bread 3 1/2 cups Flour 3 cups Sugar 1 tsp. Nutmeg 1 tsp. Cinnamon 1 tsp. Allspice 1/2 tsp. Baking Powder 2 tsp. Baking Soda 1/2 t. Salt 1 cup Oil 4 eggs 2 cups canned Pumpkin 1/2 cup chopped Walnuts (optional) Stir together the dry ingredients. Add the remaining ingredients and mix until blended. Pour into 2 greased and lightly floured loaf pans. Bake at 350 degrees for 50-60 minutes. hooked 0 #2 November 23, 2003 This may not sound good to some, but take my word for it, people will be standing around this one!!!! This dip is always a requested one! Avocado-Corn Salsa 1 16oz. pkg. frozen corn, thawed 2 2 1/4 oz. can ripe black olives, sliced 1 medium red pepper 1 small onion, chopped 5 cloves garlic, minced 4 medium ripe avocados, chopped Dressing-- 1/3 cup olive oil 1/4 cup lemon juice 3 Tablespoons white wine vinegar 1 Tablespoon oregano 1/2 teaspoon salt and pepper Toss all ingredients with dressing ingredients. Serve with tortilla chips or Scoopers! This makes alot, so if you just want to 'try it', make a half recipe. Here is a good side dish too--- Scalloped Corn 1 cube margarine, melted 2 eggs, well beaten 1 Tablespoon sugar salt and pepper to taste 1 can creamed corn 1 can whole kernel corn 1 small box Jiffy Corn Muffin mix Mix eggs, margarine, sugar, salt and pepper. Add canned corn and muffin mix. Mix until moistened. Put in oblong casserole dish. It makes about 24 servings Pumpkin Cream Cheese Dessert ingredients: 1/2 cup butter 1/3 cup white sugar 24 graham crackers, crushed 2 eggs 3/4 cup white sugar 1 (8 ounce) package cream cheese, softened 1 envelope (1 tablespoon) unflavored gelatin 1/4 cup water 1 (15 ounce) can pumpkin 3 eggs, separated 1/2 cup milk 1/2 cup white sugar 1/2 teaspoon salt 2 teaspoons ground cinnamon 1/2 pint whipped cream directions: 1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. 2 In a medium saucepan over medium heat, melt butter. Stir in the sugar and mix well. Stir in graham cracker crumbs. Pat the mixture into baking dish. 3 In a medium mixing bowl, beat together the eggs, sugar and cream cheese. Pour the mixture over crust. 4 Bake 20 minutes in the preheated oven. Remove from heat and allow the mixture to cool. 5 In a small bowl, dissolve the gelatin in water. 6 In a medium saucepan over medium heat, mix the pumpkin, eggs, milk, sugar, salt and cinnamon. Reserve the egg whites. Stirring constantly, cook until thick, about 4 minutes. Remove from heat and mix in the gelatin. Allow the mixture to cool for approximately 20 minutes. 7 In a small bowl, beat the 3 egg whites until stiff. Gently fold the egg whites into the cooled pumpkin mixture. Take one of your favorite crackers (Carr's Table Water crackers work well). Spread some cream cheese on it. Top with a sun dried tomato (they come in jars - I don't know brand names). Sweet Potato Puffs 2 cans (40 oz. each) sweet potatoes or yams, drained 3 egg yolks 1 1/2 tsp. salt 1/2 cup butter, melted 1/3 cup firmly packed brown sugar 2 cups cornflake crumbs 1/2 cup butter, melted 26 to 34 regular-size marshmallows Mash sweet potatoes and combine with egg yolks, salt, 1/2 cup butter and the brown sugar. Combine cornflake crumbs and 1/2 cup melted butter and put into shallow dish or onto waxed paper. Line muffin pan with paper baking cups. Mold sweet potato mixture around each marshmallow. Roll in cornflake mixture and place into baking cups. Poke finger into top of each puff. Freeze. When ready to bake, preheat oven to 350. Sounds wierd but a simple, easy and yummy PRE-Thanksgiving dinner snack..... 2 packages cream cheese (softened) 1 small can tuna (drained) 1 tbls. tobasco sauce 1 tsp. worshtishire sauce 2 heaping tablespoons miracle whip dash of salt and pepper 1 cup chopped walnuts Mix everything less the nuts until nice and creamy. Put onto plate and shape like a ball with spoon. Cover with chopped nuts and let chill for 1 hour. Serve with favorite crackers! YUMMY! Dreams become reality, one choice at a time... Berry Mallow Yam Bake 1/2 cup flour 1/2 cup brown sugar 1/2 cup quick cooking oats, uncooked 1 teaspoon cinnamon 2 17 oz. cans yams, drained 2 cups cranberries (fresh, uncooked) 1 1/2 cups miniature marshmellows (I really don't use this much) 1/3 cup butter or margarine Combine flour, brown sugar, quick oats and cinnamon. Cut in 1/3 cup butter or margarine until mixture resembles coarse crumbs. Toss 1 cup crumb mixture with yams and cranberries; place in 1 1/2 qt. casserole. Top with remaining crumbs. Bake in 350 oven for 35 min. Sprinkle with mini-marshmellows. Broil until lightly browned. (This makes a lot, so you can cut the recipe in half for smaller groups) -------------------------------------- Sometimes we're just being Humans.....But we're always Human Beings. mouth 0 #12 November 26, 2003 I actually use my grandmother's receipe for sweet potatoes. I bake my potatoes at 350 for about an hour. Add 3 bananas for the last 5-7 minutes. peel and mix them until creamy. Add a stick of butter and 1/2 cup sugar. Add cinnamon and all spice to taste. Top with Chopped pecans, 1/2 stick butter, and 1/2 C flour mised and crumbled on top. Bake at 350 until browned. YUM.... I also made my grandmother's Egg Bread Dressing with enough left over to stuff the turkey just caues the turkey isn't large enough to hold all that dressing. My grandmother will be missed this year but hopefully the food will be as good. -- Hot Mama At least you know where you stand even if it is in a pile of shit. Remster 30 #16 November 26, 2003 From the goo thread yesterday, here is my recipe for the goo filled choco cakes that Ophra sells for too much money: 5 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped 10 tablespoons (1 1/4 sticks) unsalted butter 3 large eggs 3 large egg yolks 1 1/2 cups powdered sugar 1/2 cup all purpose flour Vanilla ice cream For cakes: Preheat oven to 450°F. Butter six 3/4-cup soufflé dishes or custard cups. Stir chocolate and butter in heavy medium saucepan over low heat until melted. Cool slightly. Whisk eggs and egg yolks in large bowl to blend. Whisk in sugar, then chocolate mixture and flour. Pour batter into dishes, dividing equally. (Can be made 1 day ahead. Cover; chill.) Bake cakes until sides are set but center remains soft and runny, about 11 minutes or up to 14 minutes for batter that was refrigerated. Run small knife around cakes to loosen.
