Brewing Beer

I haven't made anything since I started a mead back in June. I do have a pretty kick ass Brown ale and a Scotch ale in bottles though. Oh, the mead has magically cleared in the last few days. Time to tweak the flavors and bottle.

I haven't really brewed any beer since I was president of our college's beer brewing club. It was a friend who had the magic touch for it.

Anyway, my favorite two recipes were Nosfaratu's Return, which is a really strong ale made with lots of grains and something like a half pound of honey, and Cram Session Porter, which is brown porter with half a pound of fine-ground French Roast boiled along with the malt and grains. I can get detailed instructions if you want. Also, any pale ale made with Cascade hops is pretty much bound to be good.

Yeah, I used to think that too. Now I'm getting all excited about Columbus hops. Those things are freakin' brutal!

Hop Devil is nasty, IMO. There are better Pale Ales out there, I'm a big fan of the DogFish Head 60 Minute IPA.

Anyhow, the AAs on the Columbus hops are usually around 15%.
