I have friends that like their steaks very rare, personally I prefer medium, just barely pink in the middle but that's just me. What do you like? Then I put it back on the plate. In other words, anything from medium-rare (warm pink center) to very rare (cold red center). It just depends on the cut and quality of the meat.
