AndyMan 7 #29 March 28, 2002 Well, kinda late, but here's what I had for dinner:Lemmon Herb encrusted chicken.Stir an egg until it's yolk is well mixed.Drop a chicken breast into the egg.Sprinkle generously with every herb that you like. Basil, thyme, oregano, dill, rosemary, etc. Add enough herbs so that you thoroughly coat the chicken. We're looking for BAGS of herbs here.Place it on a grill. Or a frying pan with a ouch of oil. Cook until done.Brown Rice Extravaganza.Brown rice takes a long time to took. I supose you could use normal rice, but why not try something different? When the water is boiling and you've added the rice, also add a thinly diced onion. Add the same herbs you used on the chicken.In a separate frying pan, throw in a handfull of mushrrooms and 1 tsp oil. Throw in some lemon juice and sautee the mushrooms. When they're one, set them asside.Once the rice is done, add the mushrooms. Also add some diced tomatoes and some diced spinach. Finish it off by adding a small amount of graded parmesan cheese.Tasty, healthy, adventurous, and easy. Dill is so much better when fresh, but for some reason the store bought "fresh" stuff always sucks. I'll be putting an herb garden in my window shortly. Using dried herbs is better then using no herbs. If you're just getting into it there's nothing wrong with dried. I frequently use dried when I run out of fresh. Tacos lummy style..make the taco meat whoever you like it...I usually will throw in some fried onions and black olives.Shredded cheddar cheeselettuceTomatoes (if you like, I hate them tho)Pico de gallo sauce Fry corn tortillas in a light corn oil until they start to turn SLIGHTLY brown..quickly put the taco meat inside and flip half of the tortilla over to cover... put on a paper towel to soak up excess oil Sprinkle Parmesan on the outside of tortilla then garnishGrew up way to fast, now there's nothing to believe, and reruns all become a history.... Consistency would be not to milky but not too dry. IT doesn' tmatter to much since you will be baking it so err on side of milky if questionableIn another larger baking dish, mix Ricotta, about 1/2 jar of sauce and noodles til mixed thoroughly. Cover top with remaining mozzarella. Place tin foil over top and bake in oven at 375 for about 30-35 minutes. I will usually take the tin foil off with about 5 minutes to go to brown mozzarella..Grew up way to fast, now there's nothing to believe, and reruns all become a history.... I LOVE TO COOK!cook the sauce(recipes vary) get you mozzerella, riccota and and parmasaen.(amount vary) mix with the sauce,unitl its melted. grab your noodles (you sick bastards) and combine put ion the oven to ensure even melting. this is BAKED -ZITI!but that is not the whole appeal to the dinner. its the presentation. get some nice plates serve a spinach salad, first with a glass of red wine(merlot And zinfandel will usually cover your ass. most ppl will like one or the other) put on some smooth jazz(diana krall) or classic rock (billy joel) quietly in the background BUT IT MUST HAVE PIANO in it! light thre candle. and most importantly.SERVE YOUR GUEST! prepare it in the kitchen an bringit to them in the dining room.(of course you HAVE TO CLEAN THE PANS AS YOU ARE DONE WITH THEM) by the time your dinner is on the plate your pans should be on the dish rack(hand washed) now the mood is set. salad has been served youve had a glaas or two of wine and good conversation. and dinner is ready. excuse yourself to get the next course. no need to rush. (now this is where it all come together)your dishes are done! no one feels they should help you clean up b/c there is NO MESS! you dont have the mess on your mind and dinner was fukn awesome. after a few moments when the conversation breaks. ask your guests if they would allow you to sing a song you worte for this occasion! they are dumbfounded at the extend of preparation you went to! and your G/F didnt know you could do all this.(a new light is shed) i got my guitar out and proceded to play this song that i wrote. it fit the mood exactly. Musicians have the ability to get high when they are enjoying what they play. You will need the following ingredients:6-8 Spring onions 2-3 sticks of lemon grass (about 1-2 inches per stick)3 cloves GarlicAbout 1 Tablespoon fresh ginger4 - 6 Green Chillies (according to taste)3 Limes1 400ml can of Coconut cream1 handfull pestachio nuts (shelled)400g Skinned, Deboned Chicken or Turkey breast2 good handfulls fresh Bazil3 good handfulls fresh Coriander (Dont skip this one)Pinch SaltPinch Black Pepper2 Tablespoons Olive OilFirst you will make the currey paste, This is how its done:Take the Sping onions, 2 sticks of Lemon grass, garlic, ginger, chillies, bazil, corriander and chop it in a food processor until it makes a paste or if you dont have a food prcessor just chop everything really fine (When I say fine I mean really fine). Grate the zest from the limes and add it to your paste, use the juice of the limes in your paste and also add the salt, pepper and olive oil.Cut the chicken into thin strips or blocks (whichever you prefer)Mix half the paste with the chicken and then cook in a wok or hot pan until chicken is slightly cooked (about 5mins) Than add the rest of the paste and the coconut milk and allow to simmer for about 15 mins until the liqued has thickened consistantly. Add the crushed pistachio nuts just before serving and stir into the chicken or leave sprinkled on top.Serve with Basmati rice or Jasmine rice and a small salad. All quantities are approximate, as I rarely measure when flinging together meals.1 pork tenderloin (about 4 lbs), cut into two pieces1 lime, cut into slices1/2 cup white (or fruity) wine1 cup fresh jalapeno peppers1 cup fresh habanero peppersjerk seasoningDe-stem peppers and then thoroughly chop them in food processor.Put all ingredients except jerk seasoning in a sealable (tupperware-like) container and shake vigorously. Let sit for an hour or two in the fridge.Put tenderloin on rotisserie skewers. Coat with peppers, then sprinkle generously with jerk seasoning.Cook until done, with repeateded additions of peppers and seasoning until you have a complete coating.If you want to get crazy with this recipe, cut the tenderloin pieces before you start so they are laid open like big thin sheets. Lay a bunch of spring onions in the middle, coat with peppers, then roll the tenderloin around the onions. Tie the rolls and skewer.
