Pork Rind-Crusted Fried Squirrel with Molasses Red-Eye Gravy (Serves four)
uirrels. To make “pork rind powder,” drop a bag or two of rinds in the blender and pulverize until you have coarse, sandy-textured bits. Currence recommends Brim’s Hot Pork Rinds and serves this dish with hot cornbread for sopping up the red-eye gravy.

4 young squirrels, dressed and quartered
1 yellow onion, roughly chopped
2 stalks celery, roughly chopped
2 carrots, roughly chopped
6 cloves garlic, peeled
1 gallon water
1 cup apple cider vinegar
1-1/2 cups lard
1-1/2 cups peanut or vegetable oil
3 cups all-purpose flour seasoned with salt, black pepper, paprika, onion powder, and garlic powder
2 cups pork rind powder (see recipe headnote)
2 cups milk
3 eggs, lightly beaten
3/4 tablespoon freshly cracked black pepper
Salt, cayenne powder, and Tabasco, to taste


Tasso and Molasses Red-Eye Gravy
1/3 cup tasso or other thick-sliced ham, diced
1/2 cup bacon, diced
1 tablespoon flour
1-1/4 cups beef stock
3/4 cup strong black coffee
1/3 cup Coca-Cola
2 tablespoons molasses
1/2 teaspoon red pepper flakes
Salt and freshly ground black pepper, to taste



1. Generously season the squirrel pieces with salt, pepper, and cayenne; allow to sit for 2 hours.

2. Bring water, cider vinegar, onion, celery, carrot, and garlic to a boil, then boil for 15 minutes. Add the squirrel pieces and simmer for 12 to 15 minutes, until the meat is cooked through but not falling apart. Remove the meat. Drain the vegetables in a colander and discard them.

3. Make the red-eye gravy: In a large cast-iron skillet or pan, sauté the bacon and tasso over medium heat until all the fat is rendered. Whisk in the flour until it’s well combined, continuing to whisk over medium heat for 5 minutes. Stir in the beef stock, coffee, Coca-Cola, molasses, and red pepper flakes, bring to a simmer, and whisk constantly until gravy thickens. Season with salt and pepper to taste.

4. In a large cast-iron skillet or Dutch oven, heat the oil and lard to 325°, or until a pinch of flour bubbles in the oil.

5. Whisk together the milk and eggs with a dash of Tabasco. Dust the squirrel in the seasoned flour and set aside. Add the pork rind powder to the remaining seasoned flour and combine well. Dunk the squirrel in the egg wash, then dredge them in the pork rind and flour mixture, shaking off any excess. Fry the pieces until golden brown, working in batches. Drain on paper towels and serve immediately with gravy on the side, and cornbread if desired.

I'll take your word for it. I don't listen to Randi Rhodes. I don't know who John Elliot is. And while it's sad that she busted her teeth, I don't really care to follow the story. Is this going to be blown into something that it isn't?

What he's trying to explain to you is that Randi Rhodes had her teeth knocked out and the first reports were that somehow this was a physical attack by right-wingers trying to silence her because of her views. For a day or so the liberal blogosphere went nuts based on what John Elliott, another Air America host was reporting. Elliott now admits he lied intentionally. So this is a swipe at left-wing radio blabbers to show how they lie and make things up to blame right-wingers for anything and how their left-wing minions are nothing but mind-numbed robots. You know, same thing left-wingers accuse right-wingers of. blah, blah, blah......

No. I told you yesterday that I thought that the Rush thing was a crap issue. The only reason that I even bothered to read into the subject at all is because the Rush apologists were getting their panties in such a wad and circling the wagons to such an extent that I felt compelled to point out the fallacies of the defense. And maybe part if it is because I think that Rush is a driving force in the ignorance peddling market. Maybe Randi is an ignorance peddler too but I don't know because I don't pay attention and she doesn't have much influence on the national debate.

I agree, however, I suspect that this particular "entertainment" commentator drives about equal parts of the ignorance consumer market to the point that they cancel each other out. His net effect on politics? 5 + (-5) = 0. His true effect is just his bank account is healthy and he's filler material for non-music radio stations.

IF, what you say is true, why would Reid, Moveon.org, Hilary, the DNC and many others on the side oposite of him, pay any attention to him at all?

I think that like most any discussions/presentations/lectures on politics or religion; it is rare that anybody influences anybody. Rush, and his ilk on both (or all) sides of the aisle pander to their faithful and tell them what they want to hear. These people are entertainers first; fonts of wisdom much much farther down the list.

Does anybody who gives serious thought to any significant issue really rely on any of these goofs for The Truth?

I don't agree. I certainly can't quantify it but it seems to me that the national debate has deteriorated in an almost inversely proportional relationship with the increase in popularity of this sort of "entertainment". Not only have he and his understudies been frequently referenced in the political debates here in this forum, but they also make their way out of the entertainment news and into the mainstream news. Of course part of that is because the mainstream news is so dollar oriented that it has stooped to the level of Rush's "entertainment". But the best example to make my point is the fact that now, because of the influence that these political shock jocks have, there is indeed a Congressional debate on the issue. The whole thing is just sad. But I guess when your news is essentially at the mercy of the shareholders of a half dozen or so media conglomerates, this is what we get. The appeal to the least common denominator sells.

I believe it has degraded because left no longer enjoys a majority in the media and thier ideas cant stand up to debated. So, they attack to silence the other side. And you are right. YOUR least common denominator sells

The official "honoring of our soldiers" as a means of denouncing Limbaugh's loose lips. Can't say that Rush doesn't affect politics when our politicians are wasting time yacking about him.
