Happy Monday to you, too.

I've not yet found any neutral tripe..it's always spicy!!

Menudo
3 pounds tripe
3 pounds nixtamal (hominy) frozen, not canned
3 pounds pigs feet (not calves) cut into quarters
1 large onion diced
1 bunch green onion cut up in 1/4" pieces
1 bunch of cilantro chopped
2 tablespoons Oregano
1 tablespoon black pepper
1 tablespoon red pepper flakes
1 head of garlic
2 tablespoons salt

Wash tripe thoroughly, remove excess fat and cut into bite sized pieces, wash nixtamal and pigs feet well and combine all ingredient in a large pot with enough water to cover. Bring to a boil and simmer slowly until corn opens and is cooked (not overcooked). Skim off grease. It is best if you can refrigerate it in order to remove all grease.

Serve with fresh cilantro, chopped green onion, chiltepin, limon and toasted bolillos.

:D, nice one. In the interests of mantaining this thread in Speakers corner, I think you should stipulate precisely the ratio of left versus right pigs feet.

....and what the hell is going on with the green onions and red pepper flakes, sounds like lefty tripe to me.....:o:)

I had menudo once - made by neighbors who owned a farm just the other side of the border. Their food was SO GOOD, but the menudo.....

It's something I never want to have again. and that was 17 years ago.

odd...Yeungling beer does that for me.
:D

I would just go over to hang out, and their sister would immediately get up, and fry up a goat cheese/tortilla thing - every time she was visiting. They'd get food and visitors every week from their farm.

It took awhile to connect the bad gas and the goat cheese to each other. But the snack tasted so good.

Well, apparently, the mainstream media believes in the old adage,'No news is good news."

They never did mention the raising of $4M for a worthy charity, and there's been an awful lot of silence from Iraq. Could it be that the surge is actually working, and they are hoping that no one finds out?

On the other hand, maybe they're just tired of reporting it.

BAGHDAD, October 29, 2007:

A suicide bomber on a bicycle killed 30 Iraqi policemen doing their morning exercises at a base north of Baghdad on Monday in one of the deadliest strikes on security forces in months. And a roadside bomb attack in Baghdad wounded a US general - the highest ranking US officer to be wounded in Iraq since the invasion in 2003.

The suicide bombing north of Baghdad targeted a police rapid reaction force at their base in volatile Diyala province, said Major-General Ghanim al-Quraishi, the Diyala police chief. A shopkeeper, whose store is close to the base, said that he had seen a man riding a bicycle slip through a gap in the concrete wall surrounding the compound and heard a huge blast seconds later that threw a cloud of dust into the air.

"I saw many bodies covered in blood. Some were dying, some had arms and legs blown off," said store owner Ali Shahine. At least 20 people were wounded in the attack, including a woman and a child, police said. Hospital officials gave the same number of casualties.

No group claimed responsibility for the bombing, but it bore the hallmarks of Al-Qaida, which has often used suicide bombers to devastating effect in attacks on Iraqi security forces. The base is in the city of Baquba, capital of Diyala province, a religiously and ethnically mixed region where al Qaeda and other Sunni Arab insurgent groups as well as Shi'ite Muslim militias operate.

U.S. general wounded in Iraq

Monday October 29, 2007

An American general was wounded Monday when a roadside bomb exploded beside his convoy in northern Baghdad, the U.S. military said.

Brig. Gen. Jeffrey Dorko, commander of the Gulf region Division of the U.S. Army Corps of Engineers, was the highest-ranking American soldier to be hurt since the start of the war.

Dorko's wounds were not life-threatening, officials said. He was evacuated to Landstuhl Regional Medical Center in Germany, where he was reported in stable condition.

Another soldier wounded in the attack received medical treatment but did not have to be hospitalized, the military said.

It kind of proves my point. Nearly two months of silence means something good must be happening, but as soon as there's a tragedy, it's the first story on the news.
