With most HDV camcorders you have to option of shooting SD in 4:3 or 16:9 or shoot HDV and downconvert that to SD 16:9. Some models (A1, some of the HC1s) will allow you to downconvert HDV to SD 4:3 too, either by squeezing or adding black bars top & bottom or removing a bit left & right.
If you're after HDV not SD, HDV is always widescreen.

As usual, Saskia is correct. To elaborate just a bit, _all_ HD is widescreen.
Sony offers three downconvert modes.
~Squeeze (anamorphic)
~Crop (removes/crops from both right/left sides
~Letterbox (Puts black bars on top/bottom)
Squeeze is usually the best downconvert option, as it doesn't move pixels around, and most every NLE out there can manage an anamorphic SD image, correctly reading as wide. Letterboxing is the next best option, as depending on the encoder used, it inserts flags that tell the DVD player how to play it out, either as full-frame wide or as letterboxed for display on a 4:3 screen.
Cropping, you can never recover the cropped/lopped pixels.
