On the NLE I'm on this year they save all the videos and the photos. That way if the customer get home and "the DVD doesn't play" a new one can be waiting for them at the DZ when they show up. It also allows things such as videographers to leave and the DZ still has all their DVD's in case a new one needs made again. For an entire season 1 or 2 500 gig drive can store all your encoded files, its cheap insurance in case someone forgets to finalize the DVD and the video person walks out on you that next day.

I save my edited files on the pc untill the harddrive needs cleaning up, I keep dvd's around for at least a week. Got the tapes anyway so I can re-do a dvd if I have to, but usually you notice right away if the dvd is ok or not, did have one couple BREAK the dvd though :S

We keep the MPEG and associated AC3 pretty well forever. Had two people from last year willing to pay a buncha money for replacement DVDs of their jump. If I know the name and month, I can usually find it fast. If I know the name, date...it's an instant find, and 5 min burn to new DVD with menus and extra media.
HDD's are cheep.

I edit movies from imovie direct to a dvd. I don't have edited files. But I keep every tape. I label them by date range. If someone calls for it, manifest can give me when they have jumped. I started keeping all pictures too. When of if they can I request an e-mail with a picture
